Smoke Hamburgers with Black Garlic Aioli

Smoke Hamburgers with Black Garlic Aioli

We’re using our smoked hamburger recipe, you can see it here. But use your favorite everyday best hamburger recipe. Today, it’s all about the black garlic aioli sauce.
Oh, and a little added wood smoke just makes everything taste better.

You might be able to find black garlic at your local grocer. However, we tried, searched, and couldn’t find it anywhere; despite the rumors it was available. So, we found some black garlic here on Amazon for just over $5.00. With nearly 400 of mostly 4- and 5-star customer reviews, we were confident of a good product.

This black garlic container came with 12 easy-to-peel single-clove bulbs for minimal preparation efforts. Each garlic bulb with husk was between 8 and 10 grams in weight.

Folks from Asian countries such as Thailand, South Korea, and Japan have made and used black garlic as a traditional food for centuries. It has recently been made available in the global market and your hometown big-box mega-marts.


Making the Black Garlic Aioli Sauce

An aioli is nothing more than an olive oil-based sauce with a lot of garlic. The olive oil has been emulsified and kind of looks like mayonnaise. In our easy-to-make version, we’re using avocado oil mayonnaise. Use what mayonnaise you might have on hand.

Black garlic has a slightly sweet and mild balsamic flavor with a gummy bear like texture. It really doesn’t have any garlic flavor at all. If you want that, you’ll need to add some as we did.

We add one small clove of finely chopped or crushed raw garlic to give it some traditional garlic flavor.

Make this a few hours in advance, allowing time for the flavors to blend.

Black Garlic Aioli Recipe Ingredients

optional, but highly recommended, 1 small clove fresh garlic
1 cup of your favorite mayonnaise
1 teaspoon of your favorite barbecue rub
optional, 1 tablespoon of your favorite hot sauce

Method

finely chop or crush the clove fresh of garlic
in a small container or bowl, add 1 cup of mayonnaise, barbecue rub, and hot sauce
stir and mix thoroughly
cover with plastic wrap and refrigerate until needed. Make this a few hours in advance, allowing time for the flavors to blend. Stir to mix before using

After refrigerating for several hours, we gave our black garlic sauce a good stir to mix the ingredients again. You can see those bits of black garlic.

Taste Test

I must say that smoked hamburgers are the best. Including a dollop of this black garlic aioli to the smoked hamburger and toasted bun takes it over the top. Add a slice of fresh ripe tomato and sweet Vidalia onion, and layer on some fresh greens. I’m hungry for another.
