Kamado Joe Green Chili Sauce

Kamado JoeUp today is Kamado Joe green chili sauce.

This is really easy to make. You can knock out a batch as you’re warming your Joe for an afternoon cookout of burgers or brats for you and the neighborhood.

This Kamado Joe fire roasted green chili sauce is good on just about everything. Those burgers and brats, even that bowl of Cap’n Crunch you have for breakfast every morning.

If you’re making green chili cheeseburgers, then this is the must-have recipe.

So let’s get started.

This might become your new favorite. Can you smell those roasting peppers? They smell real good!

Toss an extra jalapeno or two on the grill to kick things up a notch.

Kamado Joe Green Chili Sauce – Ingredients

Makes 5 to 6 cups.

Ingredients:
●  4 cups low-sodium vegetable broth
●  2 pounds of Anaheim peppers
●  1 small onion, minced
●  1 teaspoon dried Mexican oregano
●  2 cloves garlic, crushed
●  1 teaspoon kosher salt
●  1 teaspoon fresh ground black pepper, medium grind, use the good stuff
●  several of your favorite cold refreshing adult beverages

Today’s Note: the megamart had only 4 Anaheim peppers left, so we made up the difference with Poblano peppers. They had piles of them. So use what you can find.

Tip: extra roasted peppers freeze well and thaw out fast. So make a bunch. Just freeze a few fire roasted peppers per zip-top bag. Laying the bag flat saves freezer space and leads to faster thawing.

Note: those cold adult beverages are for the grillmaster. An ale or IPA is a good pairing with spicy foods; especially this Kamado Joe fire roasted green chili sauce. But if you’re just standing around the grill enjoying the weather, the charcoal smoke, and the outdoor experience, your favorite beverage will do just fine.

Unlike a fine scotch whisky, spices do not get better with age. Like day-old sushi, throw those old spices into the compost pile and get some quality. Your taste buds will thank you.

We like this black pepper, it has a bold intense peppery flavor when fresh ground. Way better than those megamart offerings. It’ll go fast.

You’ll need the usual assortment of grilling tools, so get organized.
●  A large bowl
●  Plastic wrap
●  Grilling tongs
●  A food processor
●  Barbecue towels, we use these
●  Canning jars and lids for the finished Kamado Joe green chili sauce

Canning jars make super convenient containers to mix of a batch of nearly anything. They are easily cleaned and reused. Keep some on hand for those kitchen tasks. We find the 1-pint size is the handiest for all-around use. Optional plastic lids are ideal replacements for the metal 2-piece canning lids when these jars are used as mixing containers. (1 pint = 16 ounces = about 1/2 liter)

Rinse the peppers under cold water.

Peel away the husk and rinse the tomatillos.

Fire up your Joe, set up for direct heat and with the grate in the high position. We want to roast the peppers, not burn them. No heat deflector needed here.

Soon as the dome temperature reaches 300 degrees, load it up with the peppers and tomatillos.

Close the dome lid.

Every few minutes open the dome and turn the peppers and tomatillos. You’re blistering the pepper skin and getting a nice char on all sides. The tomatillos are softening up, getting some nice color and roasting nicely.

As the peppers finish roasting and the tomatillos soften, put them in that large bowl and cover with plastic wrap and a barbecue towel. Let it all steam for 15 or so minutes.

Clean the peppers, remove the stem ends, divide peppers in half and peel away the blistered skin. Some of you might be thinking shortcuts and rinsing away the skins. Don’t do this, you’ll clog that sink and rinse away the roasted pepper flavor.

Pepper seeds are okay here. Finish off this step by rough chopping that pile of roasted peppers. You’ll end up with 2, maybe 3 cups.

In your food processor, puree the tomatillos.

Dump everything else in the food processor and pulse a few times to combine. You still want pepper chunks here, so don’t overdo it.

Next, pour the contents of the food processor into a pan and warm on the stovetop maybe 15 to 20 minutes. This Kamado Joe green chili sauce doesn’t need to boil, it just needs to warm so the flavors combine.
